Pepper Ragu with Tortellini

Ingredients

  • 3 tbsp. olive oil
  • 2 sweet peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 plum tomatoes, diced
  • salt & pepper to taste
  • 2 cups uncooked cheese tortellini
  • 1 tbsp. fresh basil, chopped
  • 1 tbsp, fresh parsley, chopped
  • grated parmesan cheese to garnish

Steps

  1. Boil large pot of water for tortellini.
  2. Heat oil in large skillet to med high.
  3. Sauté peppers, onion, & garlic till tender.
  4. Add tomatoes, salt & pepper.
  5. Cover & simmer on low till tortellini is done.
  6. Add tortellini to water & boil to al dente.
  7. Add basil & parsley to skillet. Simmer a little longer.
  8. Add tortellini to skillet with a little pasta water.
  9. Serve in large bowls or plates with crusty bread.
  10. Sprinkle on grated parmesan cheese.
