Ingredients
- 3 tbsp. olive oil
- 2 sweet peppers, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 plum tomatoes, diced
- salt & pepper to taste
- 2 cups uncooked cheese tortellini
- 1 tbsp. fresh basil, chopped
- 1 tbsp, fresh parsley, chopped
- grated parmesan cheese to garnish
Steps
- Boil large pot of water for tortellini.
- Heat oil in large skillet to med high.
- Sauté peppers, onion, & garlic till tender.
- Add tomatoes, salt & pepper.
- Cover & simmer on low till tortellini is done.
- Add tortellini to water & boil to al dente.
- Add basil & parsley to skillet. Simmer a little longer.
- Add tortellini to skillet with a little pasta water.
- Serve in large bowls or plates with crusty bread.
- Sprinkle on grated parmesan cheese.
