Mushroom Stroganoff

Ingredients

  • 12 oz. shitake or cremini mushrooms sliced (only use caps on shitaki)
  • ½ onion, sliced thin
  • 1 young shallot or 2 green onions, chopped
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • pinch of marjoram
  • pinch of thyme
  • Splash of brandy
  • 3/4 c. veggie broth
  • 1 cup sour cream
  • 1 ½ c. dry noodles
  • salt & pepper

Steps

  1. Saute onion in oils till slightly caramelized.
  2. Add mushrooms.
  3. Add herbs, and salt & pepper.
  4. Saute on low-med heat 5 more min.
  5. Deglaze with brandy, add veggie broth. Cook a couple more minutes.
  6. Add sour cream, keep warm but do not boil.
  7. Cook noodles in water with dash of veggie broth.
  8. Drain noodles and add butter, or not if lower fat desired.
  9. Plate noodles, top with mushrooms & serve
