Ingredients
- 1 tsp. roasted garlic, mashed or ½ tsp garlic salt
- 2 med. tomatoes, diced
- 1 tbsp. fresh basil, sliced thin
- 1 tbsp. fresh parsley, chopped
- ½ tbsp. capers, minced
- ½ tsp. dried oregano
- dash of cayenne pepper
- 3 tbsp. olive oil
- 1 tbsp. lemon juice
- 1 tbsp. balsamic vinegar
- 1 cup penne pasta
- salt & pepper to taste
Steps
- Mix all ingredients except pasta in med bowl & set aside.
- Cook pasta in boiling, salted water for 9 min.
- Drain pasta well & mix into bowl of ingredients.
- Add salt & pepper.
- Toss & serve room temperature.
