Tomato Penne Pasta with Basil

Ingredients

  • 1 tsp. roasted garlic, mashed or ½ tsp garlic salt
  • 2 med. tomatoes, diced
  • 1 tbsp. fresh basil, sliced thin
  • 1 tbsp. fresh parsley, chopped
  • ½ tbsp. capers, minced
  • ½ tsp. dried oregano
  • dash of cayenne pepper
  • 3 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 1 tbsp. balsamic vinegar
  • 1 cup penne pasta
  • salt & pepper to taste

Steps

  1. Mix all ingredients except pasta in med bowl & set aside.
  2. Cook pasta in boiling, salted water for 9 min.
  3. Drain pasta well & mix into bowl of ingredients.
  4. Add salt & pepper.
  5. Toss & serve room temperature.
