Thyme Lemon Corn Bread

This is a savory cornbread, perfect for chili and soups.

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1 tbsp. baking powder
  • 1 tsp salt
  • 1 tbsp. baking powder
  • 3 tsp. dried Lemon Thyme or Common
  • 1 tsp. lemon zest
  • 4 tbsp. melted butter
  • 2 eggs
  • 1¼ cup milk
  • 2 tsp. honey

Steps

  1. Preheat oven to 425° Combine dry ingredients in a medium bowl.
  2. In a small separate bowl, beat eggs and then add milk, honey and butter, leaving enough butter to coat the bottom of an 8 x 8 baking pan.
  3. Mix wet and dry mixtures together and stir with a spoon till smooth batter forms with only a few lumps.
  4. Pour into baking pan, bake for 25 min. until a knife comes clean.
  5. Remove and cool on rack or trivet.
