Sweet Potato Stuffing

Ingredients

  • 2 sweet potatoes, peeled and cubed
  • 4 tbsp. butter
  • 1 onion, diced
  • 1 cup corn
  • salt & pepper to taste
  • pinch of dried thyme
  • pinch of dried marjoram
  • pinch of dried sage
  • 1 cup dry stale bread cubes
  • ¼ cup veggie broth

Steps

  1. Preheat oven to 350°.
  2. Melt butter in skillet and sauté potatoes, onion and corn till onions are translucent.
  3. Add rest of ingredients and mix well.
  4. Butter a casserole dish and spread sweet potato mixture into it.
  5. Cover and bake for 20 min.

Serves: 4-6
