Thyme Beef Tenderloin


  • 2 lb. beef tenderloin
  • 2 tbsp. oil
  • 1 tsp. blackening seasoning
  • 1 small onion, chopped
  • 2 tsp. thyme
  • 1 tsp. marjoram
  • 1 tsp. salt
  • 1 bay leaf
  • 2 tbsp. chopped parsley
  • 1 cup beef broth
  • 2 tbsp. flour
  • 1 cup water
  • Steps

    1. Preheat oven to 350°. Rub oil and blackening seasoning all over tenderloin with your hands.
    2. Brown on all sides in a hot oven-proof skillet or on the grill.
    3. Add rest of ingredients except flour and water to beef in oven-proof pan.
    4. Bake in oven for 35-50 min. depending on how well done you prefer. Add water if necessary so pan is not dry.
    5. Remove tenderloin to cutting board and cover with foil to rest.
    6. Meanwhile, place skillet on stovetop on med heat. Add water to flour slowly and stir with a fork to make a slurry.
    7. Add slurry slowly to broth in pan and stir constantly making gravy.
    8. Slice up beef, plate up and pour gravy on top.
