Pepper Shrimp Diablo

Ingredients

  • 2 minced roasted hot peppers
  • 2 small roasted sweet peppers
  • 2 roasted tomatoes, peeled & chopped
  • 2 tbsp olive oil
  • 2 tsp. blackening seasoning
  • 1 lb. shrimp, de-veined & peeled
  • 1/2 cup white wine or sherry
  • 3 cloves garlic, minced
  • 2 tsp marjoram
  • 2 tbsp. chopped fresh basil
  • 10 oz. penne or linguine pasta, cooked & drained

Steps

  1. Roast peppers & tomatoes on the grill with indirect heat till brown & tender, do not char.
  2. In a bowl toss shrimp with blackening seasonings & 1 tbsp. olive oil.
  3. Grill shrimp till browned but not dry using skewers or a grill basket.
  4. In large sauté pan, heat on med, 1 tbsp. olive oil & add garlic for a couple minutes.
  5. Deglaze pan with wine or sherry.
  6. Chop up peppers & tomato & add to pan along with juices & add herbs.
  7. Stir and simmer a couple min. add in pasta & shrimp to heat.
  8. Pour all into serving bowl.
  9. Add parmesan cheese if you wish.
