Pepper Grilled Salmon with Tomato Herb Sauce

Ingredients

  • 2 salmon filets, 6-8 oz. each
  • 1 dried paprika pepper
  • 2 tsp. dried basil
  • 2 tsp. dried marjoram or oregano
  • 1 tsp. salt
  • 1 tbsp. olive oil

Sauce

  • 1 tbsp. breadcrumbs
  • 4 small roasted sweet peppers
  • 1 plum tomato, chopped
  • 1 clove garlic
  • 1 tsp. balsamic vinegar
  • 1 tbsp. olive oil

Steps

  1. Grind paprika pepper with basil , marjoram & salt until fine.
  2. Rub ½ of spice mix onto salmon, brush with 1 tbsp. olive oil.
  3. Grill salmon on med. high heat til brown on both sides & not too firm when flesh is pressed, about 8-10 min.
  4. Meanwhile, in blender or food processor, combine other 1/2 of spice mix and rest of sauce ingredients.
  5. Plate up salmon and pour sauce over the center of the filet.
