Ingredients
- 2 salmon filets, 6-8 oz. each
- 1 dried paprika pepper
- 2 tsp. dried basil
- 2 tsp. dried marjoram or oregano
- 1 tsp. salt
- 1 tbsp. olive oil
Sauce
- 1 tbsp. breadcrumbs
- 4 small roasted sweet peppers
- 1 plum tomato, chopped
- 1 clove garlic
- 1 tsp. balsamic vinegar
- 1 tbsp. olive oil
Steps
- Grind paprika pepper with basil , marjoram & salt until fine.
- Rub ½ of spice mix onto salmon, brush with 1 tbsp. olive oil.
- Grill salmon on med. high heat til brown on both sides & not too firm when flesh is pressed, about 8-10 min.
- Meanwhile, in blender or food processor, combine other 1/2 of spice mix and rest of sauce ingredients.
- Plate up salmon and pour sauce over the center of the filet.
