Ingredients
- 1 pork tenderloin
- Blackening seasoning
- Sauce 1 tbsp. oil
- 1 shallot or 2 green onions, sliced
- Splash of brandy
- 2 tbsp. fresh chives
- 1 cup orange juice
- 3 tbsp. raisins
- ½ cup water or veggie broth
Steps
- Rub tenderloin with seasoning to taste. Set aside to bring to room temp.
- In small saucepan, heat oil on med heat.
- Add shallot or onions & cook till soft.
- Add brandy & chives, cook till reduced.
- Add orange juice & simmer to reduce to half.
- Add raisins & cook till plump.
- Thicken with a little cornstarch slurry. Heat just until thickened.
- Grill tenderloin on med heat just till firm, about 30 min
- Let tenderloin rest a few min., then slice thin & serve with sauce.
