Strawberry Ricotta & Sugar Croutons

Such an easy, unusual dessert, everyone will be impressed with hardly any effort!

Ingredients

  • 4 cups strawberries, washed & hulled
  • juice of ½ orange
  • 1 tbsp. triple sec (optional)
  • ½ cup sugar

Croutons

  • 2-3 slices egg bread or other ligthtbread
  • 1 tbsp. sugar
  • ½ tsp vanilla 4 tbsp
  • 2 tbsp. melted butter

Ricotta

  • 1 ½ cups ricotta cheese
  • grated zest from 1 med orange
  • 1 tbsp. sugar & 1 tsp. vanilla

Steps

  1. Preheat oven to 400°F.
  2. Put all berry ingredients in med saucepan, cook on med hi till reduced & thickened.
  3. Meanwhile, cut bread into small cubes, mix crouton ingredients in a small bowl.
  4. Spread cubes out on lined cookie sheet, single layer & bake for 6-8 min. till brown.
  5. Remove & cool.
  6. Combine ricotta ingredients in med bowl & mix well.
  7. You may chill berry mix and ricotta or serve room temp.
  8. Arrange in dessert cups, scoop of ricotta, then berry mix over that (not too much), and then a couple of croutons & serve.
