Ingredients
- 10 oz. blackberries & ½ cup sugar
- 1/2 cup brown sugar
- 1 cup cereal, like Great Grains or Granola
- 1 tsp. cinnamon
- 4 tbsp. lite butter 1 mashed ripe banana
- 2 eggs
- 2/3 cup sour cream
- ½ cup white & ½ cup brown sugar
- 1 tsp vanilla
- 1 cup white & ½ cup wheat flour
- 1 tsp. baking powder & 1 tsp baking soda
- 6 tbsp. lite butter, melted
Steps
- Preheat oven to 350 deg.
- Simmer blackberries, liqueur, & sugar till reduced & thick. Mash berries with a potato masher.
- For streusel topping, combine brown sugar, cereal, & cinnamon in small bowl. (Reserve ½ cup for cake batter.)
- Cut in 4 tbsp. butter & 1 tsp. vanilla into cereal in bowl. Set aside.
- Beat eggs till fluffy in another bowl.
- Add white & brown sugars, sour cream & vanilla to eggs & blend.
- Add butter cuts in chunks and beat in.
- Mix dry ingredients & ½ cup streusel topping together.
- Add a little at a time to wet mix.
- Add blackberry jam to batter by folding in just to marble and distribute.
- Pour batter into buttered bundt pan or spring-form pan.
- Sprinkle on streusel topping.
- Bake for 50-55 min.
**Tip: This is actually a low fat alternative to most coffee cakes, it has only 3 gms. Fat per ¾ inch slice.
