Raspberry Chocolate Molten Cake

Ingredients

  • 12 oz. raspberries (reserve 12 berries)
  • ½ cup sugar plus extra to coat 12 berries
  • 1 tbsp. orange liqueur
  • 6 oz. semi-sweet baking chocolate
  • 10 tbsp. butter, diced room temp.
  • 3 eggs
  • ½ cup sugar
  • 1/3 cup flour

Steps

  1. Preheat oven to 350 deg.
  2. Mix berries (except reserved) with ½ cup sugar and liqueur in small saucepan.
  3. Simmer & reduce till syrupy, may take 10-15 min.
  4. Strain & mash pulp through a sieve to remove seeds & create a puree. Save.
  5. Coat reserved raspberries with sugar & save.
  6. Melt chocolate on low flame or in a double boiler.
  7. Remove from heat & stir in diced butter til it melts.
  8. In another bowl, beat eggs & sugar til it lightens.
  9. Stir in chocolate & then the flour.
  10. Butter 4-6 ramekins, pour in chocolate batter.
  11. Bake for about 10 min. Remove from oven to cool till just warm.
  12. Meanwhile, drizzle berry puree on plates. Place one cake on each plate, add berries to garnish, & drizzle more sauce on top.
