Peach Crisp

  • 1 tbsp. butter
  • 6-8 peaches
  • 2 tbsp. flour
  • ½ cup brown sugar
  • ¼ to ½ cup raw or white sugar (depending on sweetness of peaches)
  • 1 tsp. cinnamon

Streusel Topping

  • 3/4 cup unbleached flour
  • 1/4 cup granola or cereal
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp. cinnamon
  • 1/3 cup chilled butter, cut in pieces
  • Handful chopped nuts

  1. Preheat oven to 375 deg. Butter a glass baking dish or casserole dish.
  2. Halve, peel, pit & slice peaches into med size bowl. Add rest of filling ingredients & mix.
  3. Place all streusel ingredients in small bowl except butter and nuts. 4. Using a pastry blender or two knives criss-crossing repeatedly, cut butter into rest of ingredients until the size of peas.
  4. Put all filling into a buttered casserole dish or glass baking pan so that the filling is not too thick, it’s that streusel topping we all want more of.
  5. Top with streusel and spread out to the edges using a fork. Sprinkle on nuts.
  6. Bake for 30-40 min til topping is brown & bubbling.
  7. Serve warm or at room temp with whipped cream or ice cream, especially butter pecan ice cream. 😀
