Apple Spice Bundt Cake

Ingredients

  • 2 apples, peeled and sliced
  • ½ cup apple cider
  • 1 tbsp. brandy
  • 2 tbsp. brown sugar
  • ½ cup butter
  • ½ cup raw sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 ¾ cup unbleached flour
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ¼ tsp. allspice
  • ½ tsp. ground cloves
  • ½ cup raisins
  • 1 cup chopped pecans

Brandy Cheese Icing

  • 4 oz. whipped cream cheese
  • 1 ½ tbsp half n half
  • ½ lb. powdered sugar
  • 1 tsp. brandy
  • 1 tsp. vanilla

Steps

  1. Place first 4 ingredients in med. saucepan and cook down to mush. Stir occasionally.
  2. Preheat oven to 350 deg. Sift together flour, salt, baking soda, cinnamon, allspice & cloves.
  3. In large mixing bowl, cream butter & sugars.
  4. Add egg and beat in.
  5. Dredge raisins in flour mix.
  6. Add remaining flour mix to creamed mixture & beat well.
  7. Add applesauce and beat well. Beat in raisins & nuts.
  8. Bake in greased tube pan for 50 min. Test with knife, should be moist.
  9. After 10 min., remove cake from pan.
  10. While cake cools, whip up icing ingredients, about 5 min.
  11. Drizzle icing over cake.
