- 4-5 plum tomatoes
- 1 tbsp. balsamic vinegar
- 2 cloves roasted garlic or minced
- 1 tsp. salt
- fresh ground pepper
- ½ cup olive oil
- Grill whole tomatoes on med. heat till toasted well, 15min.
- Place cooled tomatoes in blender.
- Add rest of ingredients except oil in blender.
- Puree’ ingredients.
- Add oil slowly thru top opening while running blender.
- Serve over your favorite greens, toss lightly to coat.
