Sauce Rich White Veloute’


  • 2 tbsp. butter
  • 2 tbsp. flour
  • 2 cups white stock (chicken or veggie)


  1. Melt butter in small saucepan.
  2. Sprinkle flour over the butter and stir to make a paste.
  3. Cook for couple minutes without browning.
  4. Remove from heat & cool slightly.
  5. Slowly add warm stock to the pan & stir to blend till smooth.
  6. Add herbs, spices, & cheeses to this base for any white sauce.

**Tip: this sauce is more used as a base for other ingredients to be added depending on the recipe.

Serves: 6-8
