Ingredients
- 2 tbsp. golden raisins
- 1 tbsp. brandy
- 3 apples, like Macintosh, Pink Lady or Golden Delicious, peeled & chopped
- 2 tbsp. raw sugar
- 1 tbsp. brown sugar
- ΒΌ cup apple juice
- 1 tsp. cinnamon
- 2 tsp. butter
- dash of salt
- 12 pecan halves, toasted & chopped
Steps
- Soak raisins in brandy.
- Meanwhile, in large saucepan, bring to a boil rest of ingredients except butter & pecans
- Reduce heat to med. low, cover & cook 20 -25 min. till apples very soft, stirring occasionally.
- Increase heat to med. Add butter & cook uncovered for 6 min. to brown apples a little.
- Add pecans and raisins with brandy. Cook 1 more min.
- Serve warm or cool and chill. Keep in refrigerator.
**Tip: To toast pecans, lay on cookie sheet and bake in 375 deg. oven for 5 min. till darker in color.
