Ingredients
- 2 med sweetpotatoes, baked and mashed
- 1 stick butter (1/2 cup), softened
- ½ cup sugar & ½ cup brown sugar
- 2 eggs, beaten
- 2 cups flour
- 1 ½ tbsp. baking powder & 1 tsp. baking soda
- 1 tsp. cinnamon & ½ tsp. nutmeg
- ½ cup milk
- ½ cup sour cream
- ½ cup nuts, chopped
- ½ cup raisins
Optional Streusel
- ½ cup oats
- ½ cup nuts chopped fine
- ¼ cup butter
- 1/4 cup brown sugar
Steps
- Preheat oven to 350°. Grease two loaf pans.
- In a large bowl, mix mashed potato, butter, sugars and eggs till smooth with a wood spoon.
- Measure and stir dry ingredients together. Add to potato mixture and stir.
- Add milk, sour cream, nuts and raisins and stir till well blended.
- Pour batter equally into loaf pans.
- If streusel desired, combine oats, sugar and nuts and cut in pieces of butter till crumbly. Sprinkle over tops of loaves.
- Bake 1 hour until knife comes out clean.
Serves: Makes about 16 servings
