Chive Sauce Over Egg Cups

Ingredients

  • 1 tbsp. butter
  • Handfull grated cheddar
  • 4 eggs
  • salt & pepper
  • 2 English muffins or thin bagels

Sauce

  • 1 stick butter or light butter
  • 1 tsp. white wine vinegar or herb vinegar
  • 1 tsp. lemon juice
  • Handful chopped chives
  • 1 tbsp. chopped green onions

Steps

  1. Butter 4 ramikins, divide cheese among ramekins and press in bottom.
  2. Break an egg over cheese in each ramekin.
  3. Salt & pepper to taste.
  4. Place ramekins on cookie sheet & bake in 350° oven for 20 min.
  5. Meanwhile, toast muffins & on med heat, melt butter in saucepan.
  6. Add chives & onion & cook a few min. more.
  7. Remove ramekins when yolks are set but not dry. Let cool slightly.
  8. Slide knife around sides and remove egg to a plate on top of ½ muffin, cheese side up.
  9. Pour sauce over egg & muffin& serve.
