Parsley Herbed Cocktail Shrimp

Ingredients

  • 1 lb. large shrimp
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1 cu. dry white wine
  • 1 tsp. coriander seeds
  • 1 Bay Leaf
  • 5 sprigs parsley
  • 1 tsp. lemon juice

Easy Cocktail Sauce

  • 1 cup Chili Sauce
  • 1-2 tbsp. horseradish
  • 1 tsp. Worcestershire sauce
  • Mix & Serve.

Steps

  1. Peel and devein the shrimp, reserving shells.
  2. Rinse shrimp and shells.
  3. In 3-4 qt. saucepan, combine shells, salt and 3 cups water.
  4. Bring to a boil over med high heat.
  5. Reduce to low, cover and let simmer 20 min.
  6. Strain the stock, squeezing shells to extract all liquid.
  7. Place stock and rest of ingredients back in saucepan.
  8. Bring to a boil for 2 min.
  9. Turn off heat, stir in shrimp and let stand 8-10 min, covered.
  10. Drain shrimp and immerse in ice water bath till cool.
  11. Dry and serve chilled with cocktail sauce.

**Tip** You can reserve the stock for another soup or sauce.
