Ingredients
- 1 lb. large shrimp
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 cu. dry white wine
- 1 tsp. coriander seeds
- 1 Bay Leaf
- 5 sprigs parsley
- 1 tsp. lemon juice
Easy Cocktail Sauce
- 1 cup Chili Sauce
- 1-2 tbsp. horseradish
- 1 tsp. Worcestershire sauce
- Mix & Serve.
Steps
- Peel and devein the shrimp, reserving shells.
- Rinse shrimp and shells.
- In 3-4 qt. saucepan, combine shells, salt and 3 cups water.
- Bring to a boil over med high heat.
- Reduce to low, cover and let simmer 20 min.
- Strain the stock, squeezing shells to extract all liquid.
- Place stock and rest of ingredients back in saucepan.
- Bring to a boil for 2 min.
- Turn off heat, stir in shrimp and let stand 8-10 min, covered.
- Drain shrimp and immerse in ice water bath till cool.
- Dry and serve chilled with cocktail sauce.
**Tip** You can reserve the stock for another soup or sauce.
